Here with us in Tuscany, every olive oil producer would recognize their own oil out of a thousand. Every plot of olive trees has its own characteristic, and our oil is no exception. The varieties grown are Moraiolo, Leccino, Frantoiano and Pendolino, and the mix of these varieties determines the characteristics of our organic extra virgin olive oil.
In addition, our cultivation method is unique. We do not use chemical fertilizers. Our secret? The grass cut in July that grows wild under the plants. This is the only fertilizer we use.
The olive harvest is done strictly by hand, and every day all the olives picked are taken to the olive press to be processed immediately. In this way, we can preserve the precious scents contained in the olive. The result is a bright green oil with an unmistakable scent of apple and artichoke and a strong taste.
