Aged Pecorino di Pienza is a sheep’s milk cheese that has spent about 180 days in the cellar for aging. The pecorino wheels were treated periodically with olive oil, which over time gives the skin a dark hue. Produced by Cugusi Farm, it uses only pasteurized sheep’s milk. The farm is located in Val d’Orcia, a few kilometers from Montepulciano and Pienza.
