Pecorino Cheese Reserve 24 months
Pecorino Riserva 24-month cheese is the flagship cheese of the Cugusi company. This fine cheese is made only with pasteurized sheep’s milk from their own farm. The farm is located in the beautiful Val d’Orcia, a few kilometers from Montepulciano and Pienza.
Gran Riserva is made in wheels of more than 10 kg, the curd is processed and pressed by hand by the women of the dairy. The cheese is aged for about 24 months on fir boards and every 20 days the surface is treated with olive oil. The paste is finely grained and tends to flake, while the flavor is lingering but sweet.
